The Birth of Jesus

A Partridge in A Pear Tree
In the classic carol, “Twelve Days Of Christmas,” the writer receives a selection of gifts from their beloved each day. Starting with day one:
“On the first day of Christmas, my true love gave to me a partridge in a pear tree.” – Frederic Austin
Partridges commonly symbolize femininity and fertility, and occasionally, people view the partridge in this carol as a metaphor for Mary’s virgin birth. How appropriate that the gift given on the first day of Christmas coincides with the birth story of Jesus.
Finding a partridge locally proved next to impossible in Columbia, South Carolina, so this recipe involves a similar game bird in the same family, the turkey.
Don’t worry. This is not your average, boring, dry, holiday turkey.
Here is my recipe for yogurt marinated, Indian Spiced, Turkey with Garam Masala Pear Relish:
Ingredients For The Turkey:
- Ginger Paste
- Mikes Hot Honey (or honey and hot sauce/peppers)
- Lemon juice
- Garam Masala
Ingredients For The Pear Relish:
- Onion (chopped)
- Garama Masala
- Peppers (optional- for those who like extra spice) (chopped)
- EXTREMELY RIPE Pears (chopped and optionally peeled for a smoother texture)
Instructions For The Turkey:
- Melt The Ghee.
- Mix melted ghee, ginger paste, Mike’s Hot Honey (Or honey and hot sauce/ peppers), and garlic together and rub all over the inside of the turkey (especially under the skin).
- Mix Garam masala, yogurt, lemon juice, salt, and pepper and rub all over the outside of the turkey.
- Marinate for 6 hours- overnight.
- After marinating brush off the top layer of yogurt and add extra garam masala to the outside of your bird.
- Preheat your oven to 350.
- Once preheated, cook the turkey in the oven for about 22 minutes per pound.
- Check regularly for doneness. The turkey will be 160 degrees Fahrenheit when ready to be removed and rested. After several minutes, the turkey should reach 165 degrees.
Instructions For The Pear Relish
- While you wait for the turkey temperature to rise, melt the ghee in a saucepan to begin prepping your pear relish. Add chopped onions, garam masala, ginger paste, and peppers (if you like it spicy).
- Cook these ingredients for 3 minutes before adding your chopped pears.
- Cook pears for about 7 minutes, until they become a bit mushy, similar in texture to a chunky apple sauce.
Bring It All Together
- When all of your ingredients are hot and ready, pour your pear relish over your turkey.
- Serve with coconut rice, honey-drizzled spicy carrots, mustard greens, and chapati or with your favorite traditional Christmas sides.
