Pad See Ew

The inevitability of take-out creeps into all of our lives at some point. Those weeks of too much work combatted with the convenience of easy food, but when our weary bodies can spare a moment of strength for cooking, those quick, cravable meals can be just as accessible without leaving your home.

Pad See Ew, a simple composition of protein, noodles, and a sweet and savory sauce, might be the simplest stir fry, and it satisfies the Thai take-out desire I find myself fighting off regularly.

In the recipe below, I make adjustments to suit the staples in most kitchens. Asian grocery items might not be readily available near you, but with a few simple substitutions, you can skip the hunt for specialty items without sacrificing delicious flavor.

The Ingredients

Pad See Ew Sauce:

  1. 2 TBSP Black Soy Sauce, Soy Sauce, or Liquid Aminos
  2. 2 TBSP Oyster Sauce (Can use vegan mushroom sauce or a combination of 1/2 and 1/2 Worcestershire and soy sauce)
  3. 2 tsp Vinegar (rice vinegar, apple cider vinegar, or malt vinegar)
  4. 2 tsp Brown Sugar (or other sugar)
  5. 1 tsp Molasses
  6. 1 tsp or 1 clove minced garlic
  7. The Juice of 1 Lime

Stir Fry:

  1. 8 oz. Thai Rice Noodles (These make the dish special, but if you must go with spaghetti noodles, that would work too.)
  2. 1/2 TBSP Corn Starch
  3. 1 TBSP Water
  4. 1/2 block of tofu (You can use meat if you do not like tofu.)
  5. 1/8 cup of Peanut Oil
  6. 1/2 A Head of Brocolli (Cut into thin, flat slices for best results)
  7. Pad See Ew Sauce (directions above)
  8. 1 Egg

The Process

  1. Mix all of the sauce ingredients and set aside.
  2. Prepare the noodles based on their package instructions.
  3. Combine water and corn starch and pour over the tofu. Allow the corn starch slurry to soak into the tofu while preparing the noodles.
  4. Heat a wok or heavy-bottomed, saute pot to medium heat on the stove. Once the oil is hot, add your tofu. Be careful as the oil may pop up as it lightly fried the stir fry ingredients.
  5. After 3 minutes, add the broccoli and saute for 2 minutes.
  6. Push the ingredients to the side, and add your egg to the pan. Scramble the egg and then mix it in with the other ingredients.
  7. Add your sauce and noodles to the pot stirring to incorporate with the other ingredients, and cook your Pad See Ew for two more minutes.
  8. Serve with or without the toppings listed below. Enjoy!

Optional Toppings:

shredded carrots, toasted peanuts, cilantro, lime, extra soy sauce
